Birria the Right Way — Slow-Braised, Not Rushed
In San Antonio, you have plenty of taco options. What sets birria apart — and what sets our birria apart — is time and technique. The beef is braised for hours with guajillo chilies, ancho peppers, garlic, cumin, and Mexican oregano until the broth is deeply colored and the meat is melt-in-your-mouth tender. We do not rush this process.
