The Birria Melt is for the customer who loves birria but wants something beyond the tortilla. At Takitos Con Sabor in Eagle Pass, we take two thick slices of Texas Toast, load them with our slow-braised beef birria and melted cheese, and toast them until golden. The result is a birria sandwich that is crispy on the outside, rich and cheesy on the inside, and served with the same consomé dipping broth you get with our tacos. It is the most filling thing on our menu — and one of our most photographed.

What Is the Birria Melt?
Texas Toast meets slow-braised birria de res. We start with thick-cut bread, layer it with the same fall-apart beef that goes into our quesabirria tacos, add a generous amount of melted cheese, and toast it until the bread is golden and the cheese is fully incorporated. The consomé broth — the same rich dipping liquid we serve with our tacos — comes alongside for dipping. It is hearty, unique, and completely different from anything else you will find in Eagle Pass.
